Well you have just roasted your own coffee but what is the best way to keep it fresh?

Freshly roasted coffee should be treated like fresh bread. Once roasted and cooled the fresh beans should be put in an airtight glass storage jar, with the lid left open initially. After about 12 hours seal the jar.

Freshly roasted coffee emits CO2 for the first 24 hours. Therefore, once roasted, coffee needs 12 to 24 hours rest before being brewed. You can drink it before then but the taste and complexity really starts to show after 24 hours.

Keep your freshly roasted coffee beans in your airtight glass container and only take out and grind what you intend to use.  Firstly, whole bean coffee is in an environment of oxygen, it will lose a great deal of taste and start to show stale flavours in as little as 3 days. While freshly ground coffee will begin to lose a great deal of taste after only 30 minutes. The reason for this is that a greater proportion of the bean is exposed to oxygen and so a greater level of oxidation occurs.

Simple then – Roast at least once a week, store in a glass airtight container and only ever grind beans you intend to brew within 30 minutes.
